CREAMY ITALIAN SAUSAGE AND CHICKEN SOUP

1 Rotisserie Chicken or 6 cups of cut chicken

1 Pound Italian Sausage (we used ½ hot and ½ sweet) you can adjust the heat or sweetness depending on much you use of each.

15 ounces of Black Beans (drained)

15 ounces of Light Red Beans (drained)

15 ounces of Ranch Style Beans

15 ounces of Southwest Style Corn (drained)

32 ounces of Chicken Broth

3 Tablespoons Ranch Seasoning

1 Tablespoon Taco Seasoning

1 Tablespoon Italian Seasoning

½ teaspoon, salt, black pepper, crushed red pepper

¼ to ½ teaspoon of liquid smoke (optional)

3 hatch green chiles or 4 ounce can dice green chiles

8 ounces of Pepper Jack Cheese (shredded)

8 ounces of Cream Cheese

1 Red onion diced

3 garlic cloves minced

Cooking Directions – if using link sausage take off casing and dice the sausage. It is easier to take casing off the sausage links when they are cold then dice them up and let them warm up a bit before you put them in a dutch oven. In a Dutch oven fry up the sausage and break it up into small pieces as if cooks. When sausage is cooked add dice onions and cook for at least 5 to 6 minutes, then add minced garlic cloves and green chiles cook for another 2 minutes.

Drain the fat off and return to pot. Add all the rest of the spices and bring to a boil, then reduce them to low and stir the cheese and cook for another twenty minutes or until warm.

 

 

GROUND PORK STIR FRY

Serves 4

Rice for Serving

4 cloves of garlic

¼ tsp dried red chilis (red pepper flakes)

1 tbsp minced ginger

5 oz. white mushrooms

4 green onions

2 tbsp peanut butter (creamy works best)

3 tbsp soy sauce

1 tbsp honey

1 tbsp rice wine vinegar or lemon/lime juice

1 tsp sriracha (or more)

1 tsp olive oil

16 oz ground pork

4 oz of cooked bacon

¼ tsp salt

6 oz. diced spinach

Instructions

Cook rice as directed

Mince garlic, peel ginger and mince, dice mushrooms.

Make Peanut Sauce – whisk together peanut butter, soy sauce, sriracha (amount is up to you), honey, and rice wine vinegar until smooth.

Cook bacon (set aside) then in large pan heat oil and then add pork and break it up, then add mushrooms, garlic, ginger, mushrooms and bacon. Season with sea salt and cook about 5-7 minutes until cooked through

Add spinach to the cooked pork and stir about 1 minute until wilted.

 

 

PORK STEW

2 tbsp cooking oil (your choice of kind)

1# diced pork shoulder

1/tsp of salt, ground black pepper, celery salt

3 tsp ground dry mustard

1tbsp apple cider vinegar

1 tbsp mustard (I used Spicy brown) my wife likes stone ground mustard

1 diced onion

12 small mushrooms diced

2 carrots diced

1 bottle Angry Orchard (hard apple cider)

2 cups chicken broth

1/3 tsp dried thyme

½ cup of chopped cooked bacon about 5 slices

¼ cup heavy cream

Heat oil (medium high to high heat) add pork, salt, pepper, and celery salt, brown all sides

Reduce heat cook onion until soft (5 minutes) add mushroom cook about 2 minutes,

Add carrots, cider, broth, and dried thyme, bring to boil and stir/scrap to mix all things.

Place lid on pan place in preheat 325 degree oven and cook 2 ½ to 3 hours. Check on product to make sure you have enough liquid. If needed add more stock/water.

Pork should be soft, remove stew, if needed add mixed cornstarch to your thickness desire.

Stir in the cream and add bacon and more pepper or salt if needed.

 

 

SAUSAGE, PEPPERS, AND ONIONS

Serves: 8-10

1 pound hot italian sausage

1 pound mild italian sausage 

1 pound italian or mild ground sausage (i use jimmy dean in the roll)

4 large green peppers cut into wedges. (you can use red peppers mixed in also for more color)

3 large onions cut into wedges and then separated

1 large jar of tomato sauce like paul newman’s marinara

Optional: Add small amount of merlot wine to taste. It really brings out the flavor.

Cook sausage until brown about 10-15 minutes. Let cool. When sausage is cool enough to handle cut into coins about ¼ inch thick. If you want the sausage cut up into little pieces then cut each piece into eighths. (we cook our sausage on the grill. Makes it easier.)

Cook ground sausage in pan and break into very small pieces while cooking. Try to get as much grease off as possible. Place ground sausage on plate covered with paper towels and then press sausage with paper towels.

Place all the items listed above in a crockpot and cook for at least 6 hours on low or 4 hours on high. The longer you cook it the more the flavors come out. After a couple of hours try adding a little wine to taste. A very small amount at a time.

Note: if you would just like to make sandwiches, don’t bother cutting up sausage in small pieces. Makes a great sandwich with sausage cut up in coins.
